I’m sharing a clever burger-meets-appetizer idea that tucks seasoned ground beef and cheddar into egg roll wrappers and pairs them with a tangy Cheeseburger Egg Roll Sauce to tempt you to read on.

I wanted to take a burger and turn it into a handheld that surprises you. These air fryer cheeseburger egg rolls are crunchy outside and stuffed with seasoned ground beef and gooey shredded sharp cheddar cheese, and yeah they kinda taste like the best mash up you didn’t know you needed.
I keep a little jar of Cheeseburger Egg Roll Sauce for dunking and sometimes call them my secret party trick. Watching the Wraps In Air Fryer puff up and brown is oddly satisfying, and every bite makes me think I should have made these sooner.
Ingredients

- Packed with protein and iron, adds juicy savory flavor, a bit fatty though
- Sharp cheddar gives melty richness and salty tang, adds calcium and extra fat
- Crispy shells when air fried, mostly carbs, light crunch that holds filling
- Adds sweetness and bite when cooked, gives fiber and vitamin C too
- Sweet and tangy tomato base mostly sugar and carbs, classic burger flavor
- Tiny briny sweetness with crunchy bits, adds acid contrast and tiny sugars
- Bright sharp vinegar bite, almost calorie free, cuts richness and balances flavors
Ingredient Quantities
- 1 lb ground beef (about 85% lean)
- 1/2 small yellow onion, finely chopped (about 1/2 cup)
- 1 clove garlic, minced
- 1/4 cup ketchup
- 1 tbsp yellow mustard
- 2 tbsp sweet pickle relish or finely chopped dill pickles
- 1 tsp Worcestershire sauce
- 1/2 tsp kosher salt
- 1/4 tsp black pepper
- 1 cup shredded sharp cheddar cheese (about 4 oz)
- 12 egg roll wrappers
- cooking spray or 1 to 2 tbsp neutral oil (vegetable or avocado)
- Optional: 4 slices American cheese, cut into strips
- Optional for serving: extra ketchup and yellow mustard
How to Make this
1. Preheat your air fryer to 390°F and lightly spray the basket with cooking spray or brush with a little oil.
2. In a skillet over medium-high heat cook 1 lb ground beef with 1/2 cup finely chopped yellow onion and 1 minced garlic clove, breaking the beef up, until browned and the onion is softened. Drain excess fat if there’s a lot.
3. Stir in 1/4 cup ketchup, 1 tbsp yellow mustard, 2 tbsp sweet pickle relish (or finely chopped dill pickles), 1 tsp Worcestershire sauce, 1/2 tsp kosher salt and 1/4 tsp black pepper; simmer 1 to 2 minutes so it thickens a bit.
4. Remove from heat and fold in 1 cup shredded sharp cheddar cheese. Let the mixture cool 5 minutes or so so its not steaming hot and wont sog the wrappers; if it’s too wet cook a little longer to reduce liquid.
5. Place an egg roll wrapper on a clean surface rotated like a diamond. Spoon about 2 to 3 heaping tablespoons of filling near the bottom corner, add an optional strip of American cheese if using, then fold the bottom corner up over the filling, fold in both side corners, and roll snugly. Seal the top edge with a dab of water.
6. Repeat until you have up to 12 rolls. Dont overfill the wrappers or they will burst while cooking.
7. Lightly spray or brush each egg roll with cooking spray or 1 to 2 tbsp neutral oil so they crisp up in the air fryer.
8. Arrange egg rolls seam-side down in the air fryer basket in a single layer without touching. Air fry at 390°F for 6 to 8 minutes, flip halfway, until they’re golden brown and crispy. Cook in batches if needed.
9. Let them rest 1 to 2 minutes, then serve with extra ketchup and yellow mustard for dipping. Quick tips: let the filling cool so the wrappers stay dry, and if your air fryer runs hot try 375°F and add a minute or two to cook time.

FAQ
Easy Air Fryer Cheeseburger Egg Rolls Recipe Video! Substitutions and Variations
- Ground beef: swap for ground turkey or chicken, but add 1 tbsp oil or a splash of broth while cooking so it doesnt dry out; or use plant based crumbles (Beyond or Impossible) for a veg version.
- Shredded sharp cheddar: use Monterey Jack or Colby Jack for a milder melt, or 4 slices American cut into strips for extra creamy, gooey texture.
- Egg roll wrappers: large flour tortillas work if you want a softer wrap that still crisps with a light oil spray, or use wonton wrappers — they crisp faster so reduce cook time slightly.
- Ketchup/mustard/pickle relish: swap ketchup for BBQ sauce for a smoky note, use Dijon or spicy brown mustard instead of yellow for more bite, and finely chopped dill pickles in place of sweet relish for tangy crunch.
Pro Tips
1) Let the filling cool and even chill for 10 to 15 minutes before you roll. Hot filling steams the wrapper and makes them soggy, plus cooled meat is way easier to handle so you wont overstuff.
2) If the mix seems wet, either simmer it a little longer or stir in a tablespoon of breadcrumbs or panko to soak up extra moisture. Drain excess fat right after cooking too, that stuff makes wrappers limp.
3) Use a little sealing paste instead of plain water for a stronger seal: mix 1 teaspoon cornstarch with 1 tablespoon cold water, brush the edge, press and hold for a few seconds. Roll snugly and always start cooking seam-side down so they dont unroll.
4) Oil and spacing are everything in the air fryer. Lightly brush or spray each roll so they crisp evenly, preheat the basket, and dont crowd them. If your fryer runs hot try 375°F and tack on a minute or two rather than burning the outside.
5) Make ahead and freeze for easy dinners: freeze egg rolls on a sheet until firm, then bag them. Cook from frozen in the air fryer adding a few extra minutes, and reheat leftovers in the air fryer to bring back the crunch.
